I would go with Amsoil. Which bike you ride is not that important, it's the oil.

KTM 500 EXC is fully street legal and extremely good offroad.   Lots of choices.

I don't think their is "one perfect" bike though.  Not if you want to ride rough stuff and still cover some ground.   
If I was forced  to choose just one bike for everything I like to do, I'd choose a big adventure bike, a small trail bike, and maybe a sport bike.   

Actually if I absolutely had to make that choice I'd get a 500EXC or maybe a 500 class Beta.   But, as said above, riding a bike like that across the state is kind of a chore.  I rode my DRZ across the state 3 times.   A 500 EXC would be better on the road because of the gearing, and would also be better offroad.

Or just put amsoil in the GS.

Or you could pull a Great Buff move and add a trailer to your GS and get the WR R.  After riding the R and the F.  I am kind of drooling on an R.
