Vanocker Canyon is my all time favorite, and should be relatively tourist free. Do it both ways to get in some variety!

Norris Peak is another good one, although short. Take Highway 44 west from Rapid, Norris Peak north to Nemo, Nemo west to Vanocker Canyon, Vanocker to Sturgis. I see tons of sport bikes on that route.

Crook Mountain Rd runs from Hwy 85 between Deadwood and I90-Exit 17 to Whitewood.
The St Onge Rd from Exit 17 to St Onge
I always love taking Nemo Rd to Rapid (with Jim's detour of Norris Peak and Vanocker)
The paved portion of the Rochford Rd is nice.

Don't forget all of the Southern/Central Hills

Have fun.
