When you pick a dromedary bag, let me know what you find.  It's so hard to find a simple one these days and I'm due for a new one.  I have a Platypus pack now that rides high enough on the back that it doesn't interfere with the waist pack but I'd like to upgrade.  It's only a two litre version but I keep another .5 litre or so in one of the waist pockets if it's really warm as back up.
Don't forget to stash a siphon tube and, some oil to mix, in your pack now that you've got a smoker.

Have you guys seen these?  http://www.geigerrig.com/   played with one a couple years ago and it seemed like great quality. I am thinking of getting one for riding.
